How will I know if the sound I'm hearing is from the default SAM CLOUD relay or my own external relay?
is there an order ?

Well, if you connect to the SAM Cloud URL, you're listening to the SAM Cloud stream on the SAM Cloud server.
If you connect to the external relay URL, you're listening to the SAM Cloud stream on the external relay server.

Your question looks like you're mixing up things:
External Relay is NOT a secondary source for your SAM Vibe stream. That's what you do with the Live Broadcasting option.
External relays work the other way around. SAM Vibe will be the source for both it's own stream AND any external relays you add.

I have indeed been struggling to understand the sence of what a relay is suppose to be.

So I can then conclude that by using relays you (still) have 2 streams:

1. the 40 slots SAM CLOUD stream
2. your own relayed stream

With one important change in use, the source, is that correct?

It's pretty much like you were running SAM Broadcaster with 2 encoders set up for different streaming servers.
