I've been told you cannot use 2 mics without utilizing a mixing board. I bought something from Amazon that I thought would solve my problems, Phoinikas T-10 USB Sound Card Hub, but it did not. Any suggestions on how to configure to do a co-hosted show via SAM?

SAM can only handle one input device at a time.
If you want to use two or more inputs/devices you got two options:
#1 Use a hardware mixer/mixing console - Ones with USB and using USB inputs aren't available on the cheap side, though. Consider spending a couple hundred EUR
#2 Use a virtual mixer - VAC (Virtual Audio Cable) does a lot more than what you will need, but it's the only one I have personal experience with and can recommend. VAC costs about 25 EUR, but it's been around for about 20 years now and received updates all that time. There are free alternatives, I just don't know any of them first hand and can't give any recommendations. The author of VAC warns about there being scam/infected software playing with the VAC name, so be careful if you try any of that.
